- Mango Lassi
A plant-based and vegan alternative to the very popular yogurt-based drink from India.
Ingredients
1 cup unsweetened coconut yogurt (250 g)
1 cup frozen mango chunks (185 g)
1/4 cup unsweetened coconut milk (65 ml)
Preparation
Add all the ingredients to a blender and blend until smooth.
You can keep the vegan mango lassi in a sealed container in the fridge for 1 or 2 days.
2. Fresh Mint Lemonade
Ingredients
1/2 cup chopped fresh mint leaves
1/3 cup chopped fresh ginger
1/3 cup honey
2 cups boiling water
1/3 cup fresh lemon juice
1 1/2 cups cold water
Ice cubes
Fresh mint leaves
Lemon slices
Preparation
Combine chopped mint, ginger, and honey in a bowl. Add boiling water. Let steep 30 minutes. Strain into 4-cup glass measuring cup, pressing on solids to extract liquid. Add lemon juice and cold water to measure 4 cups total. It can be prepared 1 day ahead. Cover and refrigerate.
Fill glasses with ice cubes and add lemonade. Garnish with mint leaves and lemon slices and serve.
3. Cantaloupe Mint Agua Fresca
Ingredients
1 cantaloupe (4 cups chopped fruit)
1.5 cups cold water
1 tbsp fresh lemon juice
Fresh mint
Ice
Preparation
Cut the cantaloupe into pieces and place into a blender. Blend until fully pureed, then strain the puree through a fine mesh strainer and collect the juice. Pour the juice into a pitcher and add the water, fresh lemon juice, and mint.
Refrigerate for at least one hour until it’s nicely chilled.
Pour over ice and enjoy.
